What You'll Need...
- 115g butter (room temp.)
- 65g caster sugar
- 50g light brown sugar
- 1 large egg
- 1 tsp vanilla
- 180g plain flour
- 1 tsp cinnamon
- 1 tsp cornflour
- 1 tsp baking soda
- 1/2 tsp salt
- 150g chocolate chips (adjust to preference; recipe suggested white chocolate but I used both white and milk chocolate chips)
What To Do...
1. Mix together flour, cinnamon, cornflour, baking soda and salt in a bowl and set aside for later
2. Using a stand mixer or an electric whisk, cream together butter and sugar until light and fluffy. Beat in the egg and vanilla until combined.
3. Stir in dry ingredients and chocolate chips.
4. Roll the dough into balls, depending on how big you want the cookies and place on a baking tray lined with grease-proof paper. Put in freezer for approx. 30 minutes.
5. Bake at 180 degrees celsius for 10-13 minutes. Cool on a wire rack then ENJOY!
